Units shall be a Moffat gas heated convection oven and a Moffat electrically heated proofer together as a Turbofan Bake Off Module, E.T.L listed (UL Std 197 NSF - 4). The module shall consist of one Turbofan G32 Oven and one Turbofan E87 Proofer. Units shall be finished in stainless steel and the module shall be mounted on castors fixed at the rear and swivel at the front. The front two castors shall be lockable. Both Oven and Proofer shall be fitted with full view glass door. The Oven shall feature a two speed auto reversing fan, a 60 minute bake timer, and steam injection system. The proofer shall feature variable heat and humidity controls. Oven shall have capacity for 4 sheet pans while the Proofer shall have capacity for 8 sheet pans.
