Choosing the correct fryer for your frying needs is the key. Do you need a fryer which has an open pot design, a tube style fryer, or a flat bottom fryer. Open pot fryers are the easiest to clean, but have a smaller sediment zone than does a tube style fryer. These are best for lightly breaded foods. A tube style fryer has a larger sediment zone below the burners. The wide sediment area allows particles to settle & accumulate. Because the tubes are fixed, it makes cleaning more difficult than a open pot fryer. Both are well suited for most frying needs. The flat bottom fryer is designed for frying delicate items that float near the top of the oil, such as tortilla chips, taco shells, etc. These are ideal for bulk frying. Look for fryers that allow for faster recovery. Recovery is the amount of time that it takes for the fryer to heat the oil back up to the desired temperature after cold product has been dropped into the oil.
